1. Shikanji

This name might sound like Shikanjwi that typical lemon water which is sweet and salt but actually it is surely different. Shikanji is a milkshake which consists of dry fruits. Even kesar and elaichi are added to it to make richer. This dish after making is cooled for twelve hours to make it refreshing.

Doodh- jalebi is a famous dish of this region. The milk is put in a large vessel and is boiled so that it reduces to a certain level. The milk becomes quite thick and jalebi is dipped in it and then served which is quite delicious.

3. Dal bafla

Bafla is a traditional bread which is a small ball of wheat dough. The bafla is boiled in water and then grilled over dung cakes on an iron griddle and then dipped in ghee. It is served as a thali meal in which there are certain dishes such as dal, kadhi, aloo sabzi and chutneys of garlic and coriander. Even laddoos are a part of the thali.

In western Madhya Pradesh a fried version of it is available on which chaat masala is sprinkled and served. While normally the khaman is made using besan but for the fried version which is known as Surti khaman is made from chana dal. For this deep frying, method is used.
